Recipe: Strawberry and Cream Layer Cake


Here’s a deliciously special recipe from?my latest reserve, Rachel Khoo’s Kitchen Notebook, which I imagined up to celebrate the perfect flavours of British the summer months. Strawberries and cream are, quite simply, a match built in heaven?

Strawberry and cream layer cake

Makes – 1 cake
Preparation time – 30 minutes
Cooking time – 45-50 minutes


800g (1 3/4 lb) strawberries, plus 100g to garnish
150ml water, or 10 tablespoons
150g caster sugar, or 3/4 cup
your pinch of sea sea salt
1 tsp finely ground dark-colored pepper

75g unsalted melted butter, or 6 tbsp
3 eggs
One hundred twenty five caster sugar, or 1/2 cup and also 2 tbsp
150g natural yoghurt, or even 1/2 cup plus 3 tbsp
300g plain flour, or 2 1/2 pot
1 tbsp baking natural powder
A pinch of marine salt

1 vanilla pod, halved and signs removed
750ml whipping/heavy cream, or 3 or more cups plus 2 tbsp
100g caster glucose, or 1/2 cup

To make the spiced strawberries: Pre-book six berries for garnishing. Cut in half the rest of the strawberries. Place the standard water, sugar, salt and pepper in a choice saucepan and bring to a disect. Stir over a medium warm until the sugar has wholly dissolved. Take off the heat, trendy to room temperature, then cold in the fridge until important. Add the strawberries once the syrup includes completely cooled.

To make the dessert: Preheat oven to 160
